Research Description

Joyce Green Pastors, RD, MS, CDE, is a diabetes nutrition specialist and assistant professor of medical education in Internal Medicine at the University of Virginia School of Medicine. She received her B.S. degree in Food Science and Nutrition from Colorado State University, completed a dietetic internship at the University of Arkansas Medical Center, and received her M.S. degree in Human Nutrition from the University of Missouri. She has been at the UVA Diabetes Center since 1982 and has worked in the area of diabetes for over 35 years.

Joyce has professional interests in the areas of nutrition management and education, lifestyle change as it relates to the management of obesity and type 2 diabetes, and innovative educational methods such as tele-education.

Over the past seven years, she and her colleague, Dr. Terry Saunders, have been involved in partnering with the UVA Office of Telemedicine, the UVA Diabetes Education and Management Program, and the VDH Office of Minority Health and Health Equity to provide diabetes tele-education programs to high risk and underserved areas of Virginia.
